Winemaking: Harvest Night , instant soft pressing of the grapes , filtration of the juice and hold it at zero degrees for about 2 months to reach the finest aromatic substances.
Processing: careful and slow method charmat , temperature controlled by inoculation of selected yeasts , with long tenure on the noblest deposit of fermentation ( sur lattes ) , in order to enhance the most elegant qualities.

Organoleptic
Characteristics: Light pink color , refined light pink foam, small and persistent perlage.
Bouquet: delicate fragrance of spring flowers and white fruit , pleasant tasting.
Taste: taste fragrant, soft , full of freshness and minerality , subtle and complete in its elegant refinement.
Service: excellent aperitif for the most fashionable clubs , fish with a delicate flavor , ideal for starters of cured meat , salads, fresh cheeses , fine pastries .
